If you’re looking for a vegan-friendly dish that’s also gluten-free, look no further than this Greek fava. It is packed with protein and is so easy to make. German fava beans are also a recommended substitute.
Fava beans are typically found in Greek cuisine and can be difficult to find outside of that region. Fava beans are native to the Mediterranean and can be eaten in the form of either a simple salad or as a dip with breadsticks. If you don’t like plain, you may add olive oil, lemon juice, garlic powder, and salt for additional flavor.
Pour the beans out of their pods into a large bowl. Squeeze the juice of 1 lemon into each bowl and then add a tablespoon of olive oil to each bowl. Add salt and pepper, to taste. Serve with sliced pita bread (optional).
In a large pot boil 4 cups of water and 3 cloves of garlic with salt and pepper to taste. Boil the fava beans in this until they are soft (about 15 minutes). Usually, the beans are still a little crunchy at this point, but the garlic and olive oil help soften them. Drain the beans and then place them in a food processor.
Add 2 tablespoons of olive oil to the food processor and mix until smooth. Add 1/3 cup of lemon juice and 1/3 cup of white wine vinegar, or use 1 tablespoon of each lemon juice and vinegar for more flavor (optional). Now add olive oil until you reach your desired consistency with breadsticks or if you want great taste on plain salad.
